Crab-Stuffed Avocados
(great with LUMP or IMITATION crab!)
- 1 can lump crab meat (or imitation crab, chopped)
- 2 ripe avocados, halved and pitted
- 1 tbsp mayo
- 1 tsp Dijon mustard
- Juice of ½ lemon
- Salt & pepper to taste
- Sprinkle of chopped chives or green onion
Optional Add-Ins: diced cucumber, finely chopped red onion, diced tomato, or a sprinkle of paprika for color!
Mix everything (except the avocados), scoop into avocado halves, and enjoy!
